  • 2 cups uncooked quinoa
  • 2 cups Vanilla Almond Breeze almond milk
  • 1 extra large or 2 medium apples, diced
  • 1/3 cup ground flaxseed
  • 1 tablespoon apple pie spice
  • 1 tablespoon coconut oil, melted
  • Pinch of salt
  • 1/2 cup walnuts


  1. Preheat oven to 375.
  2. In a large bowl, combine all ingredients except walnuts and mix.
  3. Pour into baking dish.
  4. Bake 40 minutes. Remove from oven, top with walnuts, and bake 10 more minutes.
  5. Serve warm, with an extra shake of cinnamon. Enjoy!
