- 3 cups Almond Breeze Almondmilk Coconutmilk Unsweetened, or Vanilla Unsweetened, or Original Unsweetened
- 1/2 cup toasted coconut, packed
- 1/2 cup almonds, ground
- 1/4 cup light brown sugar, packed
- 1/4 teaspoon kosher salt
- 1 set paleta molds
- In a large pot, combine the almond coconut milk, sugar, toasted coconut, almonds and salt. Bring the mixture to a simmer over medium heat, and let it gently simmer for at least 15 minutes (to infuse the toasted coconut flavor). Pour into the pop molds, cover with a lid with popsicle sticks secured, and freeze until solid.
